4 Layer Sweet Potato Bake
I found this recipe on the Civilized Caveman’s instagram page and it was nice, but I felt the quantities could use a little tweak, as I’d prefer more Sweet Potato then Bacon! So I’ve updated the amounts of different things to make to a little yummier in my mind! I haven’t actually sprinkled any bacon on top because I don’t think its needed but feel free too.
This is another great winter warmer that wont hinder your health goals. You can pre-bake it and reheat for lunch or dinner during the week or you can prepare on Sunday and just bake on your chosen day during the week for dinner, you may just need to bake a little longer to warm evenly through.
Its a great way to get your daily serve of vegetables in too with 2 1/2 serves of vegetables per serve.
4 Layer Sweet Potato Bake
TIME: 1 hour
1/4 cup coconut milk
1/2 tsp pink salt
1/2 tsp pepper
Sweet Potato Layer
1kg sweet potato, peeled & largely diced
1/2 cup coconut milk
1tsp dried oregano
2 tsp pink salt
1kg beef mince, (if mincing your own use rump or something similar)
2tsp chopped garlic
1 small onion, diced
1 cup zucchini, diced
salt & pepper to taste
Preheat your oven to 160c (fan forced).
Place sweet potato pieces in a steamer potato and let steam till soft.
While potato is cooking roughly dice cauliflower, using a microwave safe dish & a splash of water, microwave under hard vegetable setting.
While the vegetables are cooking heat the olive oil in a large frying pan, add the beef mince, once the mince begins to brown add the onion and garlic. When the meat is almost done add the zucchini and salt and pepper. Turn off heat once meat is browned, this can continue to cook while your following the next step with the vegetables.
Drain any remaining water from your cauliflower container. Keeping the cauliflower in the microwave container use your kitchen wand to puree the mix. Once its starting to really break down add the milk, salt & pepper. When all the ingredients are combined put aside.
Remove potato from the steamer and put in a container suitable to use with your kitchen wand (I personally reuse the cauliflower one once the cauliflowers has been removed) Using your kitchen wand puree till starting to mash together, add milk, oregano and salt, blend until well combined.
Using a slotted spoon place 1/2 the meat mix into the base of a large rectangle baking dish. Pour over cauliflower mix and spread evenly. Add the remainder of the mince over cauliflower. Top with sweet potato mix, spreading evenly.
Be careful of the heat the dish may have absorbed from its contents, place into preheated oven and bake for 30minutes.
