BISCOFF BALLS

INGREDIENTS

  • 250g Biscoff Biscuits (2-3extra for rolling)
  • 105g Light Cream Cheese (philli or similar)
  • 140g Biscoff Spread
  • 25g White chocolate bits

METHOD

Using your stick mixer blade attachment (one that looks like a tiny food processor), blitz your biscuits up till they are a crumb.

Poor biscuit crumb into a medium bowl.

Place your chocolate chips into the stick mixer to blitz to make them smaller to really get a taste throughout each ball instead of big chunks, add to bowl of biscuit crumbs

Add cream cheese & spread to the stick mixer and blend till just combined, add to the cookie crumbs.

Use your hands to mix the dough together until its well combined and comes into a ball easily.

Using a TBSP scoop out the dough and roll into a ball.

If you are going to roll in more crumbs, blitz them and have them resting on a plate for you to roll your formed balls.

Repeat till all your dough is balled & crumbed.

Place in the fridge till firm, they are good at room tempo but cold is delicious.
