Easy Paleo Crepes

Make sure when you have crepes for breakfast you pack?them with loads of fresh fruit cause it tastes amazing with them. Key to these is to try get them thin, they shouldn’t be thick like a pancake.


Easy Paleo Crepes

Time: 25 minutes

Serves: 2



1/2 cup almond milk

2 eggs

3 Tbsp coconut flour

1/8 tsp baking powder



Combine all ingredients in a medium bowl, allow to sit for 10minutes so the flour can absorb the liquid.

Preheat a ?non-stick frying pan on a medium heat, spray with coconut oil and turn to medium – low heat, place about 1/4 cup mix into pan and twist pan until spread and smooth. Allow to cook for 1-2 minutes until when you shake the pan it will loosen. Flip and cook for a minute. Place on a warm plate while you cook the remainder of your crepes.

Stuff?with coconut cream (thats been in the fridge and then whipped) fresh strawberries, bananas, mango or passionfruit, what ever tickles your fancy, I like to top with some slivered almonds for extra crunch.
