Paleo Banana Bread

I often find that Paleo Banana Breads can be soggy, full of eggs, sweetener or just not nice so I’ve had a play in the kitchen and this is what I have for you!

When I made this bread I had small bananas in the fruit bowl (think Lady Finger size) so if you have regular sized bananas you will really only need 2.

Paleo Banana Bread

TIME: 1hour 15 minutes



3 small Bananas

3 eggs

1tsp vanilla

2Tbsp honey

3Tbsp coconut oil, melted

2 cups almond meal

1/4tsp pink salt

1tsp baking soda

1/4 cup pecans, plus 1-2Tbsp to top



Preheat your oven to 180c (fan forced), line a loaf pan and spray with coconut oil.

In a blender or food processor pulse all your wet ingredients together.

Add the dry ingredients, blend until combined.

Pour into prepare loaf pan, sprinkle with pecans, if you like a sweet taste you can sprinkle coconut sugar on top, about 1tsp would be plenty, but this recipe is perfect without it.

Bake at 180c for 55mins.

Quick and easy! Serve warm with your herbal tea to get you through the afternoon.
