Paleo Carrot Cake

Carrot cake is one of my favourite treats in-fact its my favourite cake, I wish it was my Birthday cake every year (hint, wink). When I first started following Paleo I trawled the internet for a good, easy carrot cake recipe. I never found one I liked. Now I bring to your the Best dam Paleo Carrot your ever going to eat! Where’s the frosting you say? it honestly doesn’t need it, I really do hope you enjoy this easy to assemble cake as much as I do.

Time:1 hour

Serves: 10 – 12


2 cups unblanched almond meal

4 tbsp coconut flour

3 eggs

2 tbsp coconut oil

3 tbsp maple syrup

2 tbsp apple sauce

1 medium carrot, grated

1/2 tsp vanilla bean paste

pinch pink salt

1/2 tsp cinnamon

1 tsp baking soda

1 tsp baking powder

1/3 cup walnuts, roughly chopped

4 medjool dates, roughly chopped


Preheat oven to 170 Celsius (fan force)

Combine dry ingredients in a medium bowl, using a wooden spoon.

Add in the wet ingredients and mix well.



Add carrot, dates & walnuts, mix till combined.


Prepare loaf pan with baking paper or use a silicone container.

Pour batter into pan.


Bake in oven for 45 minutes. Allow to cool in the tin.

Remove from the tin and store in an air tight container for a week, or until its all gone.
