Paleo, Vegan Twix Bars
The original recipe for these had a coconut sugar caramel which was far to sweet, my date caramel version is just the right amount of sweet and tastes even more like a store bought Twix!
3/4 cup + 2 Tbsp almond meal
1/4 cup arrowroot powder
pinch pink salt
4 Tbsp coconut oil
1 1/2 tsp vanilla extract
1 Tbsp pure honey
1 cup chocolate
1 Tbsp cacao butter
(or make your chocolate from scratch)
Preheat oven to 170c fan-forced.
In a large bowl, combine almond meal, arrowroot powder & salt.
In a separate bowl mix together the oil, vanilla & honey.
Using a spatula gently mix the wet & dry ingredients together. Don?t over mix or the batter will get oily.
line a cookie tray with baking paper and shape dough into a 1/4 inch thick square.
Bake at 170c for 10-15minutes, or until the edges start to brown.
Remove from the oven & cut into 14 pieces but keep close together, move to the side and let the biscuit cool on a wire rack.
Make the caramel. Spread evenly across the top of each biscuit. Refrigerate while you melt/make your chocolate.
If your using bought chocolate melt in a double boiler with cacao butter.
Dip each biscuit into the chocolate to cover.
Place on tray lined with baking paper and place in fridge to set.
