Sweet Potato Stack

When your living a Paleo lifestyle your can often get a bit excited with overdoing it on protein, so its nice to slip some carbs & fibre into the mix when your having breakfast to try and continue the habit through the day.


Sweet Potato Stack

Time: 15minutes

Serves: 1



1 eggs

2 slices sweet potato, 1cm thick

1 1/2 cups baby spinach

2 rashes bacon



Place your 2 sweet potato slices in a microwave safe bowl and cook in the microwave on the hard vegetable setting, I like to leave the skin on when doing this because right under the skin is where you find a huge mouthful of nutrients, seems pointless to feed them to the chooks. While the potato is cooking place your bacon in a large frying pan on medium heat, when the potato is done add it to the bacon pan, only adding some coconut oil if you want more fat then the bacon has supplied.

While the bacon and sweet potato are cooking get yourself ready to poach your egg and have your spinach on hand. When bacon & sweet potato are ready place to the side, add your spinach to the frying pan allowing it to wilt down, on a medium – low heat. Poach your egg.

While egg is cooking get your stack ready, placing one sweet potato slice on your plate, topping it with spinach and another slice of potato, place the back on the side and once your egg is cooked the way you like it put it on the top of the stack.
