The Best Paleo Ice Cream
So I don’t know if I ever told you but I love ice cream, this is a picture of me at 3months being feed ice cream by my Mum, her excuse? We had just moved from Warrnambool to Mildura so a temperature change of 15-20 degrees Celsius, therefor she was sharing with me to keep me cool, she’s a good Mum cause thats a Golden Gaytime…her favourite. But from this moment on I have loved ice cream, it doesn’t even have to be with some yummy baked dessert, just by itself in front of the tv, out in the yard or driving in the car, i love ice cream! Now on my Paleo transformation it was an important thing for me to find an amazing ice cream recipe, I’ve found good ones using coconut milk but they just where’t creamy enough. But this wasn’t going to stop me, it wasn’t until one day I was reading a magazine and there was a recipe for regular dairy ice cream in there that i thought, ‘thats it! its missing cream!’ so no I have it for you, the best ice cream recipe straight out of the freezer bowl!
The Best Paleo Ice Cream
Time: 30 minutes
400ml can coconut milk
400ml can coconut cream
1/3 cup agave
2tsp vanilla paste
1 cup puréed strawberry
1/3 cup raw cacao powder & 2/3 cup coconut milk
1 1/2 cups puréed mango
Combine milk, cream, agave & vanilla in a mixing bowl. Following the instructions of your ice cream churn or mix master ice cream bowl, I personally just use the ice cream bowl on my mix master. Allow it to churn away until it’s setting, I leave mine for about 20minutes, but everyones bowl is different, but don’t rush, it let it fluff up and get light. If your not using your ice cream right now, place your ice cream in a plastic container to store in freezer, I use little 250ml or 275ml containers so I can just pull out a serve when I need or you can divide it over a desert.
At this point you can add your flavours I always remove 1/2 the mixture into a container so I have vanilla each time (so optional ingredients are for 1/2 of what you make).
Purée 1 1/2 cups of fresh (or frozen) strawberries with 2-3tbsp water till a smooth consistency. Add the puree to the remainder of your ice cream mix allow to combine for 3-4 minutes. Either serve or place in containers to freeze.
Place cacao & coconut milk in a mug or microwave safe jug. Warm for 30secs. This will allow for you to end up with a really thick, rich hot chocolate looking mix. Let it cool while the freezing magic happens. Add the cacao to the remainder of your ice cream mix allow to combine for 3-4 minutes. Either serve of place in containers to freeze.
Puree 2 cups of fresh (or frozen) mango with 2-3tbsp water (I used coconut water) till a smooth consistency. Add the puree to the remainder of your ice cream mix allow to combine for 3-4 minutes. Either serve of place in containers to freeze.
