Wholefood Lemon Slice

This would probably have to be my most delayed post ever! 9months to be exact, my sister brought it to my attention this week that she couldn’t find the recipe for the Lemon Slice I served them during zucchini harvest. But good things are worth waiting for ;P

Wholefood Lemon Slice

Time: 30-40minutes (1hr to set)

Serves: 12 -14

Ingredients

Base

1/3 cup walnuts

1/2 cup steal cut oats

1/2 cup buckwheat groats

1 tsp maca powder

3/4 cup coconut flakes

1 cup medjool dates, pitted

2 tbsp maple syrup

zest from 1 lemon

juice from 1 lemon

1/4 tsp pink salt

Icing

1/4 cup coconut oil, melted

2 tbsp coconut butter, melted

2 tbsp maple syrup

1/2 tsp vanilla extract

juice of 1/2 a lemon

Method

Starting with your base, place all dry ingredients in food processor and blitz till it becomes a course meal. Add in wet ingredients (including dates) and blend until it forms into a dough.

Line a square tin with baking paper & firmly press dough down into the dish using a hot wet spoon.

For the icing, whisk together all ingredients until smooth. Pour the icing over the base. Place in the fridge for 1hour or overnight till set.
